Mrs. Wakeen is a registered licensed dietitian nutritionist and principal/owner of Correctional Nutrition Consultants, Ltd., specializing in correctional foodservice and nutrition consultation to all types of correctional facilities nationwide. She has more than 34 years of corrections experience in various corrections venues and is an internationally recognized writer and speaker in corrections. She represents the Academy of Nutrition and Dietetics on the NCCHC Board and holds several leadership positions within NCCHC.
