Dr. Kevin Sauer is a Professor and Chair of the Nutritional Sciences Department at the University of Oklahoma Health Sciences Center. As a Registered Dietitian Nutritionist for 30 years, he has extensive experience with administration in healthcare food and nutrition services, child nutrition programs, college/university dining, and corporate services. His research spans food safety, food systems, and nutrition. Dr. Sauer is past President of Academy of Nutrition and Dietetics, and he has extensive leadership experience across the profession. He is an award-winning educator who uses innovative teaching methods in distance and campus-based course delivery.
