422 Nutritional Characteristics of State Prison Menus*
Description
Nutrition-related health disparities plague prisons and may contribute to chronic health conditions. A recent study of state prison menus found that 53% of prisons provide nongendered menus where males and females receive the same meals. Sodium was served in excess and fruit and vegetable servings fell short of recommendations. Presenters will review the application of the Dietary Guidelines for Americans to prison menus.
